This Caturra comes from Ana María Donneys at La Paloma in Circasia, Quindío, Colombia, and is sourced through Yellow Rooster. Ana developed the Wine Honey method with Edwin Noreña as one of Primitivo’s early experiments in differentiated processing. The method combines a period of open fermentation with a longer sealed stage before drying.
